Raspberry Sorbet Pavlova

  • 1 5-inch pavlova piece
  • 1-2 scoops of raspberry ice cream

Raspberry Sauce Ingredients

  • 3 cups frozen raspberries
  • 1/2 cup icing sugar

method

  • Make the sauce by boiling frozen raspberries until thawed and the water drained. Add icing sugar, stir to combine. Simmer over medium heat until the water reduces. Strain through a fine sieve and mash the raspberries with a spoon. Set aside to cool.
  • Place the pavlova on a serving plate, scoop the raspberry sorbet on top, drizzle with raspberry sauce, and garnish with assorted berries and mint leaves.

  • 4-6 giant freshwater prawns
  • 2-3 teaspoons of salted butter, softened
  • A pinch of salt and pepper

  • 1 cup mixed berries, such as strawberries, raspberries, blueberries, and mulberries, chopped 1/4 cup diced tomatoes 2 tablespoons diced shallots 1 tablespoon lime juice 1-2 tablespoons sugar 2 chili peppers, chopped 1 tablespoon chopped coriander

  • Use scissors to cut the shrimp shells, make a slit in the back, season with salt and pepper, grill in a pan with a little oil until cooked, add salted butter, when the butter melts, scoop out.
  • Make the salsa by combining the berries with the tomatoes, shallots, lime juice, sugar, chili peppers and cilantro. Toss gently to combine. Serve with grilled shrimp.
